Ingredients
- Sticky rice - 200 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Pandan leaves - 2 pieces (optional for flavor)
- Mung beans (cooked) - 50 grams (for topping, optional)
- Sesame seeds - 1 tablespoon (for garnish, optional)
Steps
- Soak the sticky rice in water for at least 4 hours or overnight, then drain.
- Steam the soaked sticky rice in a bamboo steamer or a heatproof dish lined with pandan leaves for about 30 minutes until fully cooked.
- While the sticky rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves and the mixture is warm (do not boil).
- Once the sticky rice is done, transfer it to a mixing bowl and pour 150 ml of the sweetened coconut milk mixture over it. Mix well and let it sit for 10 minutes to absorb the flavors.
- Line a small dish (about 15x10 cm) with plastic wrap and press the sticky rice mixture firmly into the dish to form an even layer.
- Refrigerate for at least 30 minutes until set.
- Once set, cut the pudding into desired shapes and serve with the remaining coconut milk sauce drizzled on top. Garnish with cooked mung beans and sesame seeds if desired.
