Ingredients

  • Sticky rice - 200 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Pandan leaves - 2 pieces (optional for flavor)
  • Mung beans (cooked) - 50 grams (for topping, optional)
  • Sesame seeds - 1 tablespoon (for garnish, optional)

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight, then drain.
  2. Steam the soaked sticky rice in a bamboo steamer or a heatproof dish lined with pandan leaves for about 30 minutes until fully cooked.
  3. While the sticky rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves and the mixture is warm (do not boil).
  4. Once the sticky rice is done, transfer it to a mixing bowl and pour 150 ml of the sweetened coconut milk mixture over it. Mix well and let it sit for 10 minutes to absorb the flavors.
  5. Line a small dish (about 15x10 cm) with plastic wrap and press the sticky rice mixture firmly into the dish to form an even layer.
  6. Refrigerate for at least 30 minutes until set.
  7. Once set, cut the pudding into desired shapes and serve with the remaining coconut milk sauce drizzled on top. Garnish with cooked mung beans and sesame seeds if desired.
