Ingredients
- Sticky rice - 1 cup (200g)
- Coconut milk - 1 cup (240ml)
- Mushrooms (shiitake or oyster) - 150g, finely chopped
- Palm sugar - 2 tablespoons (30g)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh coriander - for garnish
- Sesame oil - 1 tablespoon (15ml)
- Soy sauce - 1 tablespoon (15ml)
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked sticky rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30 minutes until fully cooked.
- While the rice is steaming, heat sesame oil in a pan over medium heat and sauté the chopped mushrooms for about 5-7 minutes until they are soft and lightly browned.
- Add the coconut milk, palm sugar, salt, and black pepper to the mushrooms, stirring until the palm sugar is fully dissolved and the mixture is well combined. Simmer for an additional 5 minutes.
- Once the sticky rice is done, fluff it with a fork and transfer it to a large bowl. Pour the mushroom-coconut mixture over the rice and mix well to combine.
- Serve the Khao Niew Poo warm, garnished with fresh coriander and a drizzle of soy sauce.
