Ingredients

  • Sticky rice - 200 grams
  • Mackerel fish (or any firm white fish) - 200 grams
  • Lime - 1, juiced
  • Garlic - 2 cloves, minced
  • Chili flakes - 1 teaspoon
  • Fish sauce - 2 tablespoons
  • Coriander leaves - a handful, chopped
  • Cucumber - 1, sliced
  • Salt - to taste

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight for best results.
  2. Drain the soaked sticky rice and steam it in a bamboo steamer or a rice cooker for about 20-25 minutes until sticky and translucent.
  3. While the rice is steaming, prepare the fish by seasoning it lightly with salt and grilling it on a barbecue or stovetop grill pan for about 4-5 minutes on each side, or until cooked through.
  4. In a small bowl, mix together the lime juice, minced garlic, chili flakes, and fish sauce to create the dipping sauce.
  5. Once the rice is cooked, fluff it with a fork and serve it alongside the grilled fish.
  6. Garnish with chopped coriander leaves and serve with cucumber slices and the dipping sauce on the side.
