Ingredients
- Sticky rice - 200 grams
- Coconut milk - 100 ml
- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Red bell pepper - 1/2, diced
- Zucchini - 1 small, sliced
- Red onion - 1/2, thinly sliced
- Fresh basil leaves - 1/4 cup, chopped
- Cooked chicken breast - 100 grams, shredded
- Thai red curry paste - 1 tablespoon
- Lime juice - 1 tablespoon
- Sliced jalapeños - 1 tablespoon (optional)
- Cilantro - 2 tablespoons, for garnish
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- After soaking, drain the rice and steam it in a bamboo steamer or a heatproof dish over boiling water for about 30 minutes until tender.
- In a bowl, mix the steamed sticky rice with coconut milk and salt until well combined. Allow the mixture to cool slightly.
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Spread the sticky rice mixture onto the prepared baking sheet, shaping it into a pizza base about 1 cm thick.
- Bake the rice base in the preheated oven for 15-20 minutes, or until it starts to become golden and crispy on the edges.
- While the base is baking, heat olive oil in a pan over medium heat. Add the red bell pepper, zucchini, and red onion, and sauté until just tender, about 5 minutes.
- Stir in the shredded chicken, Thai red curry paste, and lime juice, cooking until heated through. Remove from heat.
- Once the rice base is done, remove it from the oven and evenly distribute the chicken and vegetable mixture over the top.
- Return the pizza to the oven and bake for an additional 10 minutes to heat everything through and meld the flavors.
- Remove from the oven, top with fresh basil, jalapeños (if using), and garnish with cilantro before slicing and serving.
