Ingredients

  • Sticky rice - 200 grams
  • Coconut milk - 100 ml
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Red bell pepper - 1/2, diced
  • Zucchini - 1 small, sliced
  • Red onion - 1/2, thinly sliced
  • Fresh basil leaves - 1/4 cup, chopped
  • Cooked chicken breast - 100 grams, shredded
  • Thai red curry paste - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Sliced jalapeños - 1 tablespoon (optional)
  • Cilantro - 2 tablespoons, for garnish

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. After soaking, drain the rice and steam it in a bamboo steamer or a heatproof dish over boiling water for about 30 minutes until tender.
  3. In a bowl, mix the steamed sticky rice with coconut milk and salt until well combined. Allow the mixture to cool slightly.
  4. Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
  5. Spread the sticky rice mixture onto the prepared baking sheet, shaping it into a pizza base about 1 cm thick.
  6. Bake the rice base in the preheated oven for 15-20 minutes, or until it starts to become golden and crispy on the edges.
  7. While the base is baking, heat olive oil in a pan over medium heat. Add the red bell pepper, zucchini, and red onion, and sauté until just tender, about 5 minutes.
  8. Stir in the shredded chicken, Thai red curry paste, and lime juice, cooking until heated through. Remove from heat.
  9. Once the rice base is done, remove it from the oven and evenly distribute the chicken and vegetable mixture over the top.
  10. Return the pizza to the oven and bake for an additional 10 minutes to heat everything through and meld the flavors.
  11. Remove from the oven, top with fresh basil, jalapeños (if using), and garnish with cilantro before slicing and serving.
