Ingredients

  • Sticky rice - 200 grams
  • Coconut milk - 150 ml
  • Brown sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Vegetable oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Green onions - 2, chopped
  • Fresh cilantro - a handful, chopped
  • Lime wedges - for serving

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer for about 20-25 minutes, or until fully cooked and sticky.
  3. While the rice is steaming, heat vegetable oil in a pan over medium heat and sauté the minced garlic until fragrant.
  4. Add the diced red bell pepper, julienned carrot, and zucchini to the pan, stir-frying for about 5-7 minutes, or until the vegetables are tender but still crisp.
  5. In a separate saucepan, combine coconut milk, brown sugar, and salt. Heat over low heat, stirring until the sugar is dissolved.
  6. Once the rice is cooked, transfer it to a serving bowl and drizzle the coconut milk mixture over the top. Gently mix to combine.
  7. Serve the sticky rice topped with the sautéed vegetables, garnished with chopped green onions and cilantro. Add lime wedges on the side for extra flavor.
