- Sticky rice - 200 grams
- Coconut milk - 150 ml
- Brown sugar - 30 grams
- Salt - 1/4 teaspoon
- Vegetable oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Green onions - 2, chopped
- Fresh cilantro - a handful, chopped
- Lime wedges - for serving
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the soaked rice and steam it in a bamboo or metal steamer for about 20-25 minutes, or until fully cooked and sticky.
- While the rice is steaming, heat vegetable oil in a pan over medium heat and sauté the minced garlic until fragrant.
- Add the diced red bell pepper, julienned carrot, and zucchini to the pan, stir-frying for about 5-7 minutes, or until the vegetables are tender but still crisp.
- In a separate saucepan, combine coconut milk, brown sugar, and salt. Heat over low heat, stirring until the sugar is dissolved.
- Once the rice is cooked, transfer it to a serving bowl and drizzle the coconut milk mixture over the top. Gently mix to combine.
- Serve the sticky rice topped with the sautéed vegetables, garnished with chopped green onions and cilantro. Add lime wedges on the side for extra flavor.
