Ingredients

  • Sticky rice - 200 grams
  • Coconut milk - 150 ml
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Fresh mango - 1 medium, sliced
  • Sesame seeds - 1 tablespoon, toasted
  • Mint leaves - a handful, for garnish

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. After soaking, drain the rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20-25 minutes until tender.
  3. In a small saucepan, combine the coconut milk, sugar, and salt. Heat over low heat until the sugar is dissolved, then remove from heat.
  4. Once the sticky rice is cooked, transfer it to a bowl and pour half of the coconut mixture over it. Stir gently to combine and let it sit for about 10 minutes to absorb the flavors.
  5. To serve, place a portion of the sticky rice on each plate, drizzle with the remaining coconut milk, and top with sliced mango.
  6. Sprinkle with toasted sesame seeds and garnish with fresh mint leaves.
