Ingredients
- Sticky rice - 200 grams
- Coconut milk - 150 ml
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Fresh mango - 1 medium, sliced
- Sesame seeds - 1 tablespoon, toasted
- Mint leaves - a handful, for garnish
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- After soaking, drain the rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20-25 minutes until tender.
- In a small saucepan, combine the coconut milk, sugar, and salt. Heat over low heat until the sugar is dissolved, then remove from heat.
- Once the sticky rice is cooked, transfer it to a bowl and pour half of the coconut mixture over it. Stir gently to combine and let it sit for about 10 minutes to absorb the flavors.
- To serve, place a portion of the sticky rice on each plate, drizzle with the remaining coconut milk, and top with sliced mango.
- Sprinkle with toasted sesame seeds and garnish with fresh mint leaves.
