Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 200 ml
  • Palm sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Star anise - 2 whole
  • Cinnamon stick - 1 small
  • Tamarind paste - 1 tablespoon
  • Sesame seeds - 1 tablespoon (for garnish)
  • Fresh mango - 1 small (optional, for serving)

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 25-30 minutes until tender.
  3. In a saucepan, combine the coconut milk, palm sugar, salt, star anise, cinnamon stick, and tamarind paste. Cook over low heat, stirring until the sugar dissolves and the mixture is fragrant.
  4. Once the rice is cooked, transfer it to a serving bowl and drizzle half of the coconut sauce over it. Stir gently to combine.
  5. Let the rice sit for about 5 minutes to absorb the flavors.
  6. Serve the Khao Niew Pha Lo warm, garnished with sesame seeds and accompanied by fresh mango slices if desired. Drizzle the remaining coconut sauce on top.
