- Salt - 1/4 teaspoon
- Star anise - 2 whole
- Cinnamon stick - 1 small
- Tamarind paste - 1 tablespoon
- Sesame seeds - 1 tablespoon (for garnish)
- Fresh mango - 1 small (optional, for serving)
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 25-30 minutes until tender.
- In a saucepan, combine the coconut milk, palm sugar, salt, star anise, cinnamon stick, and tamarind paste. Cook over low heat, stirring until the sugar dissolves and the mixture is fragrant.
- Once the rice is cooked, transfer it to a serving bowl and drizzle half of the coconut sauce over it. Stir gently to combine.
- Let the rice sit for about 5 minutes to absorb the flavors.
- Serve the Khao Niew Pha Lo warm, garnished with sesame seeds and accompanied by fresh mango slices if desired. Drizzle the remaining coconut sauce on top.
