- Sticky rice - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Red bell pepper - 1, julienned
- Carrot - 1 medium, julienned
- Broccoli - 100 grams, cut into small florets
- Snow peas - 100 grams, trimmed
- Soy sauce - 3 tablespoons
- Oyster sauce (vegetarian) - 1 tablespoon
- Thai basil - 1/4 cup, chopped
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Salt - to taste
Steps
- Soak the sticky rice in water for at least 3 hours or overnight. Drain and steam the rice in a bamboo or metal steamer for about 20 minutes until cooked and sticky.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced shallots, and sauté until fragrant and golden brown.
- Add the red bell pepper, carrot, broccoli, and snow peas to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
- Stir in the cooked sticky rice, soy sauce, and vegetarian oyster sauce. Mix well to combine and heat through for another 3-4 minutes.
- Remove from heat and fold in the chopped Thai basil and cilantro. Adjust salt to taste.
- Serve hot with lime wedges on the side for drizzling.
