Ingredients

  • Sticky rice - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Red bell pepper - 1, julienned
  • Carrot - 1 medium, julienned
  • Broccoli - 100 grams, cut into small florets
  • Snow peas - 100 grams, trimmed
  • Soy sauce - 3 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Thai basil - 1/4 cup, chopped
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste

Steps

  1. Soak the sticky rice in water for at least 3 hours or overnight. Drain and steam the rice in a bamboo or metal steamer for about 20 minutes until cooked and sticky.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced shallots, and sauté until fragrant and golden brown.
  3. Add the red bell pepper, carrot, broccoli, and snow peas to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  4. Stir in the cooked sticky rice, soy sauce, and vegetarian oyster sauce. Mix well to combine and heat through for another 3-4 minutes.
  5. Remove from heat and fold in the chopped Thai basil and cilantro. Adjust salt to taste.
  6. Serve hot with lime wedges on the side for drizzling.
