- Sticky rice - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Thai bird's eye chili - 2, finely chopped
- Green bell pepper - 1, sliced
- Carrot - 1, julienned
- Mushrooms - 150 grams, sliced
- Soy sauce - 2 tablespoons
- Oyster sauce (vegetarian) - 1 tablespoon
- Sugar - 1 teaspoon
- Fresh basil leaves - 30 grams, roughly chopped
- Lime - 1, cut into wedges
Steps
- Rinse the sticky rice under cold water until the water runs clear. Soak in water for at least 2 hours, then steam for 20 minutes until tender.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped chilies, sautéing until fragrant.
- Add the sliced green bell pepper and julienned carrot to the skillet, stir-frying for 2-3 minutes until they begin to soften.
- Add the sliced mushrooms and continue to stir-fry for another 3-4 minutes until they are cooked through.
- Pour in the soy sauce, vegetarian oyster sauce, and sugar, stirring well to combine all the ingredients. Cook for an additional 2 minutes.
- Remove the skillet from heat and gently fold in the fresh basil leaves.
- Serve the stir-fry over a bed of sticky rice, garnished with lime wedges on the side.
