Ingredients

  • Sticky rice - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Thai bird's eye chili - 2, finely chopped
  • Green bell pepper - 1, sliced
  • Carrot - 1, julienned
  • Mushrooms - 150 grams, sliced
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Fresh basil leaves - 30 grams, roughly chopped
  • Lime - 1, cut into wedges

Steps

  1. Rinse the sticky rice under cold water until the water runs clear. Soak in water for at least 2 hours, then steam for 20 minutes until tender.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped chilies, sautéing until fragrant.
  3. Add the sliced green bell pepper and julienned carrot to the skillet, stir-frying for 2-3 minutes until they begin to soften.
  4. Add the sliced mushrooms and continue to stir-fry for another 3-4 minutes until they are cooked through.
  5. Pour in the soy sauce, vegetarian oyster sauce, and sugar, stirring well to combine all the ingredients. Cook for an additional 2 minutes.
  6. Remove the skillet from heat and gently fold in the fresh basil leaves.
  7. Serve the stir-fry over a bed of sticky rice, garnished with lime wedges on the side.
