- Sticky rice - 150 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, sliced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium (red or yellow), sliced
- Zucchini - 1 small, julienned
- Soy sauce - 2 tablespoons
- Oyster sauce (vegetarian) - 1 tablespoon
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil leaves - 10 leaves, torn
- Lime - 1, cut into wedges for serving
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo steamer or rice cooker for about 20 minutes or until fully cooked and sticky.
- While the rice is steaming, heat vegetable oil in a large wok or frying pan over medium heat.
- Add minced garlic and sliced shallots to the pan, stirring for about 1-2 minutes until fragrant.
- Add the julienned carrot, bell pepper, and zucchini to the pan, stir-frying for 3-4 minutes until the vegetables are tender but still crisp.
- In a small bowl, mix soy sauce, vegetarian oyster sauce, sugar, and black pepper. Pour this sauce over the stir-fried vegetables and mix well.
- Add the cooked sticky rice to the wok, gently folding it into the vegetable mixture until well combined. Cook for an additional 2-3 minutes to heat through.
- Add torn basil leaves and mix gently. Remove from heat.
- Serve the Khao Niew Pad Khao hot with lime wedges on the side.
