Ingredients

  • Sticky rice - 150 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallots - 2, sliced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium (red or yellow), sliced
  • Zucchini - 1 small, julienned
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil leaves - 10 leaves, torn
  • Lime - 1, cut into wedges for serving

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo steamer or rice cooker for about 20 minutes or until fully cooked and sticky.
  3. While the rice is steaming, heat vegetable oil in a large wok or frying pan over medium heat.
  4. Add minced garlic and sliced shallots to the pan, stirring for about 1-2 minutes until fragrant.
  5. Add the julienned carrot, bell pepper, and zucchini to the pan, stir-frying for 3-4 minutes until the vegetables are tender but still crisp.
  6. In a small bowl, mix soy sauce, vegetarian oyster sauce, sugar, and black pepper. Pour this sauce over the stir-fried vegetables and mix well.
  7. Add the cooked sticky rice to the wok, gently folding it into the vegetable mixture until well combined. Cook for an additional 2-3 minutes to heat through.
  8. Add torn basil leaves and mix gently. Remove from heat.
  9. Serve the Khao Niew Pad Khao hot with lime wedges on the side.
