Ingredients

  • Glutinous rice - 200 grams
  • Naem (fermented Thai sausage) - 100 grams, sliced
  • Cucumber - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Mint leaves - 10 grams, roughly chopped
  • Coriander leaves - 10 grams, roughly chopped
  • Lime - 1, juiced
  • Chili flakes - 1 teaspoon
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30 minutes, or until the rice is cooked and sticky.
  3. While the rice is steaming, prepare the naem by slicing it into thin rounds and set it aside.
  4. In a small bowl, mix the fish sauce, lime juice, sugar, and chili flakes to create a dressing.
  5. Once the rice is cooked, fluff it with a fork and let it cool slightly.
  6. To serve, place a portion of sticky rice on each plate, top with the sliced naem, and arrange the cucumber and carrot around.
  7. Drizzle the dressing over the top and garnish with mint and coriander leaves.
