- Sticky rice - 150 grams
- Coconut milk - 200 ml
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Lime juice - 2 tablespoons
- Fresh mango - 1 medium, diced
- Sesame seeds - 1 tablespoon, toasted
- Fresh mint leaves - for garnish
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the soaked rice and steam it in a steamer basket lined with cheesecloth for about 20-25 minutes, or until tender.
- In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar dissolves, then remove from heat.
- Once the rice is cooked, transfer it to a mixing bowl and pour half of the coconut milk mixture over it. Stir well to combine and let it sit for about 10 minutes.
- In a small bowl, mix the remaining coconut milk with lime juice and set aside.
- To serve, place a portion of the sticky rice on a plate, drizzle with the lime-infused coconut sauce, and top with diced mango.
- Sprinkle toasted sesame seeds on top and garnish with fresh mint leaves.
