Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 200 ml
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Lime juice - 2 tablespoons
  • Fresh mango - 1 medium, diced
  • Sesame seeds - 1 tablespoon, toasted
  • Fresh mint leaves - for garnish

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked rice and steam it in a steamer basket lined with cheesecloth for about 20-25 minutes, or until tender.
  3. In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar dissolves, then remove from heat.
  4. Once the rice is cooked, transfer it to a mixing bowl and pour half of the coconut milk mixture over it. Stir well to combine and let it sit for about 10 minutes.
  5. In a small bowl, mix the remaining coconut milk with lime juice and set aside.
  6. To serve, place a portion of the sticky rice on a plate, drizzle with the lime-infused coconut sauce, and top with diced mango.
  7. Sprinkle toasted sesame seeds on top and garnish with fresh mint leaves.
