Ingredients

  • Chicken breast - 250 grams, minced
  • Sticky rice - 150 grams, cooked and cooled
  • Mango - 1 medium, sliced
  • Coconut milk - 50 ml
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste
  • Sesame oil - 1 teaspoon
  • Lettuce leaves - 2, for serving

Steps

  1. In a mixing bowl, combine minced chicken, garlic, fish sauce, brown sugar, lime juice, cilantro, salt, and pepper. Mix well and form into two patties.
  2. Heat sesame oil in a skillet over medium heat. Cook the chicken patties for about 5-7 minutes on each side until fully cooked and golden brown.
  3. While the patties are cooking, prepare the sticky rice buns. Take a handful of cooked sticky rice and mold it into a patty shape, about 1 cm thick. Repeat for a total of 4 rice patties.
  4. In a separate small saucepan, combine coconut milk and a pinch of salt. Heat gently until warm but do not boil.
  5. To assemble the burgers, place one sticky rice patty on a plate, add a chicken patty on top, then layer with mango slices and a drizzle of warm coconut milk sauce. Top with a lettuce leaf and another sticky rice patty to complete the burger.
