- Chicken breast - 250 grams, minced
- Sticky rice - 150 grams, cooked and cooled
- Mango - 1 medium, sliced
- Coconut milk - 50 ml
- Fish sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Garlic - 1 clove, minced
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Pepper - to taste
- Sesame oil - 1 teaspoon
- Lettuce leaves - 2, for serving
Steps
- In a mixing bowl, combine minced chicken, garlic, fish sauce, brown sugar, lime juice, cilantro, salt, and pepper. Mix well and form into two patties.
- Heat sesame oil in a skillet over medium heat. Cook the chicken patties for about 5-7 minutes on each side until fully cooked and golden brown.
- While the patties are cooking, prepare the sticky rice buns. Take a handful of cooked sticky rice and mold it into a patty shape, about 1 cm thick. Repeat for a total of 4 rice patties.
- In a separate small saucepan, combine coconut milk and a pinch of salt. Heat gently until warm but do not boil.
- To assemble the burgers, place one sticky rice patty on a plate, add a chicken patty on top, then layer with mango slices and a drizzle of warm coconut milk sauce. Top with a lettuce leaf and another sticky rice patty to complete the burger.
