Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Ripe mango - 1 medium
  • Sesame seeds - 1 tablespoon
  • Coconut flakes - 2 tablespoons (optional)

Steps

  1. Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, or overnight for best results.
  2. After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam the rice over boiling water for 25-30 minutes until tender.
  3. While the rice is cooking, prepare the coconut sauce by combining the coconut milk, sugar, and salt in a small saucepan. Heat over medium-low until the sugar dissolves, then remove from heat.
  4. Once the rice is cooked, transfer it to a mixing bowl and add about 100 ml of the coconut sauce. Stir well to combine and let it sit for about 10 minutes to absorb the flavors.
  5. Peel the mango and slice it into thin strips or wedges.
  6. To serve, place a portion of the sticky rice on a plate, arrange the mango slices beside it, and drizzle with the remaining coconut sauce. Sprinkle with sesame seeds and coconut flakes if using.
