- Sticky rice - 150 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Ripe mango - 1 medium
- Sesame seeds - 1 tablespoon
- Coconut flakes - 2 tablespoons (optional)
Steps
- Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, or overnight for best results.
- After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam the rice over boiling water for 25-30 minutes until tender.
- While the rice is cooking, prepare the coconut sauce by combining the coconut milk, sugar, and salt in a small saucepan. Heat over medium-low until the sugar dissolves, then remove from heat.
- Once the rice is cooked, transfer it to a mixing bowl and add about 100 ml of the coconut sauce. Stir well to combine and let it sit for about 10 minutes to absorb the flavors.
- Peel the mango and slice it into thin strips or wedges.
- To serve, place a portion of the sticky rice on a plate, arrange the mango slices beside it, and drizzle with the remaining coconut sauce. Sprinkle with sesame seeds and coconut flakes if using.
