- Sticky rice - 200 grams
- Mackerel fillets - 200 grams
- Coconut milk - 100 ml
- Fish sauce - 2 tablespoons
- Palm sugar - 1 tablespoon
- Lime - 1, juiced
- Chili flakes - 1 teaspoon
- Fresh coriander - 2 tablespoons, chopped
- Cucumber - 1, sliced for garnish
Steps
- Soak the sticky rice in water for at least 2 hours or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer for about 30 minutes, or until tender.
- While the rice is cooking, prepare the fish by seasoning the mackerel fillets with fish sauce, palm sugar, and chili flakes.
- Heat a non-stick skillet over medium heat and lightly grease it with oil. Cook the seasoned mackerel for 4-5 minutes on each side until cooked through and golden brown.
- In a small saucepan, heat the coconut milk with lime juice over low heat until warm, then set aside.
- Once the sticky rice is done, fluff it with a fork and serve it on plates.
- Place the cooked mackerel on top of the sticky rice, drizzle with warm coconut milk, and garnish with chopped coriander and cucumber slices.
