Ingredients

  • Sticky rice - 200 grams
  • Mackerel fillets - 200 grams
  • Coconut milk - 100 ml
  • Fish sauce - 2 tablespoons
  • Palm sugar - 1 tablespoon
  • Lime - 1, juiced
  • Chili flakes - 1 teaspoon
  • Fresh coriander - 2 tablespoons, chopped
  • Cucumber - 1, sliced for garnish

Steps

  1. Soak the sticky rice in water for at least 2 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer for about 30 minutes, or until tender.
  3. While the rice is cooking, prepare the fish by seasoning the mackerel fillets with fish sauce, palm sugar, and chili flakes.
  4. Heat a non-stick skillet over medium heat and lightly grease it with oil. Cook the seasoned mackerel for 4-5 minutes on each side until cooked through and golden brown.
  5. In a small saucepan, heat the coconut milk with lime juice over low heat until warm, then set aside.
  6. Once the sticky rice is done, fluff it with a fork and serve it on plates.
  7. Place the cooked mackerel on top of the sticky rice, drizzle with warm coconut milk, and garnish with chopped coriander and cucumber slices.
  8. Serve immediately and enjoy your Khao Niew Kua Pla!
