Ingredients
- Sticky rice - 200 grams
- Pork belly - 150 grams, thinly sliced
- Garlic - 2 cloves, minced
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon (gluten-free)
- Palm sugar - 1 tablespoon, grated
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped (for garnish)
- Chili flakes - 1/2 teaspoon (optional, for spice)
- Water - 300 ml (for cooking rice)
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the soaked rice and steam it in a bamboo or metal steamer for about 20-25 minutes until tender and sticky.
- While the rice is cooking, heat a pan over medium heat and add the sliced pork belly. Cook until it starts to render fat and becomes slightly crispy.
- Add the minced garlic to the pan and sauté until fragrant, about 1 minute.
- Pour in the fish sauce, soy sauce, and grated palm sugar, stirring well to coat the pork evenly. Cook for an additional 3-4 minutes until the sauce thickens slightly.
- Season with black pepper and chili flakes (if using), then remove from heat.
- Once the sticky rice is cooked, serve it on plates topped with the stir-fried pork. Garnish with chopped cilantro.
