  • Palm sugar - 1 tablespoon, grated
  • Black pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Chili flakes - 1/2 teaspoon (optional, for spice)
  • Water - 300 ml (for cooking rice)

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer for about 20-25 minutes until tender and sticky.
  3. While the rice is cooking, heat a pan over medium heat and add the sliced pork belly. Cook until it starts to render fat and becomes slightly crispy.
  4. Add the minced garlic to the pan and sauté until fragrant, about 1 minute.
  5. Pour in the fish sauce, soy sauce, and grated palm sugar, stirring well to coat the pork evenly. Cook for an additional 3-4 minutes until the sauce thickens slightly.
  6. Season with black pepper and chili flakes (if using), then remove from heat.
  7. Once the sticky rice is cooked, serve it on plates topped with the stir-fried pork. Garnish with chopped cilantro.
