- Sticky rice - 200 grams
- Cooked chicken breast, shredded - 150 grams
- Eggs - 2 large
- Chopped green onions - 50 grams
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Ginger, minced - 1 teaspoon
- Garlic, minced - 1 teaspoon
- Coriander leaves, for garnish - 10 grams
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer for about 25-30 minutes until tender and sticky.
- While the rice is steaming, heat sesame oil in a large pan over medium heat. Add minced garlic and ginger, sautéing until fragrant.
- Add the shredded chicken to the pan, stirring well, and cook for about 3-5 minutes until heated through.
- In a bowl, whisk the eggs and then pour them into the pan, scrambling them with the chicken until fully cooked.
- Add the cooked sticky rice to the pan, followed by soy sauce and fish sauce. Stir well to combine all ingredients thoroughly.
- Fold in the chopped green onions and remove from heat.
- Serve the Khao Niew Kua hot, garnished with fresh coriander leaves.
