- Sticky rice - 200 grams
- Minced chicken - 200 grams
- Thai basil leaves - 1 cup
- Garlic - 3 cloves, minced
- Thai bird's eye chili - 2, finely chopped
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Fish sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Eggs - 2
- Cucumber - 1, sliced for garnish
- Lime wedges - 2 for serving
Steps
- Soak the sticky rice in water for at least 4 hours or overnight. Drain and steam the rice for 20-25 minutes until tender.
- In a pan, heat vegetable oil over medium heat and sauté minced garlic and bird's eye chili until fragrant.
- Add minced chicken to the pan and cook until browned, breaking it up as it cooks.
- Stir in soy sauce, oyster sauce, fish sauce, and sugar. Cook for another 3-5 minutes until the chicken is cooked through.
- Add the Thai basil leaves and stir until wilted, then remove from heat.
- In a separate pan, fry the eggs sunny-side up or to your preference.
- Serve the sticky rice topped with the chicken mixture and a fried egg on the side, garnished with cucumber slices and lime wedges.
