Ingredients

  • Sticky rice - 200 grams
  • Minced chicken - 200 grams
  • Thai basil leaves - 1 cup
  • Garlic - 3 cloves, minced
  • Thai bird's eye chili - 2, finely chopped
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Eggs - 2
  • Cucumber - 1, sliced for garnish
  • Lime wedges - 2 for serving

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight. Drain and steam the rice for 20-25 minutes until tender.
  2. In a pan, heat vegetable oil over medium heat and sauté minced garlic and bird's eye chili until fragrant.
  3. Add minced chicken to the pan and cook until browned, breaking it up as it cooks.
  4. Stir in soy sauce, oyster sauce, fish sauce, and sugar. Cook for another 3-5 minutes until the chicken is cooked through.
  5. Add the Thai basil leaves and stir until wilted, then remove from heat.
  6. In a separate pan, fry the eggs sunny-side up or to your preference.
  7. Serve the sticky rice topped with the chicken mixture and a fried egg on the side, garnished with cucumber slices and lime wedges.
