Ingredients

  • Sticky rice - 200 grams
  • Coconut milk - 400 ml
  • Water - 500 ml
  • Fresh ginger - 20 grams, sliced
  • Pandan leaves - 2 pieces, tied in a knot
  • Salt - 1/2 teaspoon
  • Palm sugar - 2 tablespoons
  • Sesame seeds - 1 tablespoon, toasted
  • Chopped fresh cilantro - 2 tablespoons

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight.
  2. Drain the soaked sticky rice and steam it in a bamboo steamer or a rice cooker for about 20-25 minutes until cooked through.
  3. In a saucepan, combine coconut milk, water, sliced ginger, pandan leaves, salt, and palm sugar. Bring to a gentle simmer over medium heat.
  4. Once the mixture is simmering, remove it from heat and let it steep for about 10 minutes to infuse the flavors.
  5. Remove the ginger slices and pandan leaves from the coconut milk mixture.
  6. Serve the steamed sticky rice in bowls and ladle the warm coconut milk soup over it.
  7. Garnish with toasted sesame seeds and chopped cilantro before serving.
