Ingredients

  • Sticky rice - 200 grams
  • Coconut milk - 400 ml
  • Vegetable broth - 200 ml
  • Red curry paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Tofu (firm, cubed) - 150 grams
  • Green onions (sliced) - 2 stalks
  • Cilantro (chopped) - 2 tablespoons
  • Lime - 1, cut into wedges
  • Crispy fried noodles - 50 grams
  • Salt - to taste

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the rice and steam it in a bamboo or metal steamer for about 25 minutes until tender.
  3. In a saucepan, heat a bit of oil over medium heat and add the red curry paste, cooking for 1-2 minutes until fragrant.
  4. Add the coconut milk, vegetable broth, soy sauce, and sugar to the saucepan, stirring to combine, and bring to a gentle simmer.
  5. Add the cubed tofu to the curry sauce and let it simmer for about 10 minutes, allowing the flavors to meld, then season with salt to taste.
  6. Once the sticky rice is cooked, fluff it with a fork and divide it into two bowls.
  7. Ladle the coconut curry with tofu over the sticky rice in each bowl.
  8. Top each serving with crispy fried noodles, sliced green onions, and chopped cilantro.
  9. Serve with lime wedges on the side for an extra burst of flavor.
