- Crispy fried noodles - 50 grams

Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Drain the rice and steam it in a bamboo or metal steamer for about 25 minutes until tender.
- In a saucepan, heat a bit of oil over medium heat and add the red curry paste, cooking for 1-2 minutes until fragrant.
- Add the coconut milk, vegetable broth, soy sauce, and sugar to the saucepan, stirring to combine, and bring to a gentle simmer.
- Add the cubed tofu to the curry sauce and let it simmer for about 10 minutes, allowing the flavors to meld, then season with salt to taste.
- Once the sticky rice is cooked, fluff it with a fork and divide it into two bowls.
- Ladle the coconut curry with tofu over the sticky rice in each bowl.
- Top each serving with crispy fried noodles, sliced green onions, and chopped cilantro.
- Serve with lime wedges on the side for an extra burst of flavor.
