- Jasmine rice - 1 cup (200g)
- Coconut milk - 1/2 cup (120ml)
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons (30ml)
- Lime juice - 1 tablespoon (15ml)
- Fresh cilantro - 1/4 cup, chopped
- Peanut oil - 2 tablespoons (30ml)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in fresh water for 30 minutes.
- In a pot, combine the soaked rice with 1 cup (240ml) of water and cook according to package instructions until fluffy.
- In a large skillet, heat the peanut oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the diced carrot and bell pepper to the skillet, cooking for 3-4 minutes until slightly softened.
- Stir in the cooked jasmine rice, coconut milk, soy sauce, lime juice, salt, and black pepper. Mix well to combine all ingredients.
- Cook for another 2-3 minutes, allowing the flavors to meld, stirring occasionally.
- Remove from heat and stir in the chopped green onion and cilantro.
- Serve hot, garnished with additional cilantro if desired.
