Ingredients

  • Sticky rice - 200 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Ripe mango - 1 medium, sliced
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and place it in a steamer lined with cheesecloth or parchment paper. Steam the rice for about 25-30 minutes, or until tender and sticky.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar has dissolved but do not bring it to a boil.
  4. Once the rice is cooked, transfer it to a mixing bowl and pour about 150 ml of the coconut sauce over it. Mix gently to combine and let it sit for about 10 minutes to absorb the flavors.
  5. To serve, portion the sticky rice onto plates, drizzle with the remaining coconut sauce, and top with fresh mango slices. Sprinkle with toasted sesame seeds for added texture.
