Ingredients

  • Sticky rice - 200 grams
  • Minced pork - 150 grams
  • Tomatoes - 3 medium, chopped

  • Shallots - 2, finely chopped
  • Thai bird chili - 2, chopped (adjust to taste)
  • Fish sauce - 1 tablespoon
  • Palm sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Green onion - 2 tablespoons, chopped
  • Vegetable oil - 1 tablespoon

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight for best results.
  2. Drain the soaked rice and steam it in a bamboo steamer or a rice cooker for about 30 minutes until fully cooked and sticky.
  3. In a skillet, heat the vegetable oil over medium heat and sauté the minced garlic and shallots until fragrant.
  4. Add the chopped tomatoes and Thai bird chili to the skillet, cooking until the tomatoes soften.
  5. Stir in the minced pork and cook until browned, breaking it apart as it cooks.
  6. Add the fish sauce, palm sugar, and lime juice, mixing well and simmering for an additional 5 minutes until the mixture thickens slightly.
  7. Remove from heat and stir in chopped cilantro and green onion.
  8. Serve the sticky rice warm alongside the Nam Prik Ong dip.
