- Green onion - 2 tablespoons, chopped
- Vegetable oil - 1 tablespoon
Steps
- Soak the sticky rice in water for at least 4 hours or overnight for best results.
- Drain the soaked rice and steam it in a bamboo steamer or a rice cooker for about 30 minutes until fully cooked and sticky.
- In a skillet, heat the vegetable oil over medium heat and sauté the minced garlic and shallots until fragrant.
- Add the chopped tomatoes and Thai bird chili to the skillet, cooking until the tomatoes soften.
- Stir in the minced pork and cook until browned, breaking it apart as it cooks.
- Add the fish sauce, palm sugar, and lime juice, mixing well and simmering for an additional 5 minutes until the mixture thickens slightly.
- Remove from heat and stir in chopped cilantro and green onion.
- Serve the sticky rice warm alongside the Nam Prik Ong dip.
