- Sticky rice - 150 grams
- Chicken breast - 200 grams
- Coconut milk - 100 milliliters
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Fish sauce - 1 teaspoon
- Sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Fresh cilantro - for garnish
- Salt - to taste
- Pepper - to taste
- Water - 300 milliliters
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- In a pot, bring 300 ml of water to a boil and add the soaked sticky rice. Reduce heat to low, cover, and steam for about 20 minutes until the rice is cooked and sticky.
- While the rice is cooking, season the chicken breast with minced garlic, soy sauce, fish sauce, salt, and pepper. Let it marinate for about 10 minutes.
- In a skillet, heat a little oil over medium heat and cook the marinated chicken for about 5-7 minutes on each side until fully cooked. Remove from the skillet and let rest for a few minutes before slicing.
- In a small saucepan, combine coconut milk, sugar, and lime juice. Heat gently until warmed through, stirring to dissolve the sugar.
- To serve, place the sticky rice on a plate, top with sliced chicken, drizzle with coconut sauce, and garnish with fresh cilantro.
