Ingredients

  • Sticky rice - 150 grams
  • Chicken breast - 200 grams
  • Coconut milk - 100 milliliters
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish
  • Salt - to taste
  • Pepper - to taste
  • Water - 300 milliliters

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a pot, bring 300 ml of water to a boil and add the soaked sticky rice. Reduce heat to low, cover, and steam for about 20 minutes until the rice is cooked and sticky.
  3. While the rice is cooking, season the chicken breast with minced garlic, soy sauce, fish sauce, salt, and pepper. Let it marinate for about 10 minutes.
  4. In a skillet, heat a little oil over medium heat and cook the marinated chicken for about 5-7 minutes on each side until fully cooked. Remove from the skillet and let rest for a few minutes before slicing.
  5. In a small saucepan, combine coconut milk, sugar, and lime juice. Heat gently until warmed through, stirring to dissolve the sugar.
  6. To serve, place the sticky rice on a plate, top with sliced chicken, drizzle with coconut sauce, and garnish with fresh cilantro.
