Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 200 ml
  • Brown sugar - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Purple sweet potato - 100 grams, steamed and sliced
  • Carrots - 100 grams, julienned
  • Cucumber - 100 grams, sliced
  • Fresh coriander - 2 tablespoons, chopped
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked sticky rice and steam it in a bamboo steamer lined with cheesecloth for about 20 minutes until cooked and sticky.
  3. In a small saucepan, combine the coconut milk, brown sugar, and salt over low heat, stirring until the sugar dissolves. Remove from heat and set aside.
  4. While the rice is steaming, prepare the vegetables: steam the sweet potato until tender, julienne the carrots, and slice the cucumber.
  5. Once the rice is cooked, fluff it with a fork and serve it on a plate.
  6. Drizzle the coconut sauce over the sticky rice and arrange the steamed sweet potato, julienned carrots, and cucumber slices on the side.
  7. Garnish with fresh coriander and sprinkle chili flakes over the top, if desired. Serve warm.
