- Sticky rice - 150 grams
- Coconut milk - 200 ml
- Brown sugar - 2 tablespoons
- Salt - 1/4 teaspoon
- Purple sweet potato - 100 grams, steamed and sliced
- Carrots - 100 grams, julienned
- Cucumber - 100 grams, sliced
- Fresh coriander - 2 tablespoons, chopped
- Chili flakes - 1/2 teaspoon (optional)
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the soaked sticky rice and steam it in a bamboo steamer lined with cheesecloth for about 20 minutes until cooked and sticky.
- In a small saucepan, combine the coconut milk, brown sugar, and salt over low heat, stirring until the sugar dissolves. Remove from heat and set aside.
- While the rice is steaming, prepare the vegetables: steam the sweet potato until tender, julienne the carrots, and slice the cucumber.
- Once the rice is cooked, fluff it with a fork and serve it on a plate.
- Drizzle the coconut sauce over the sticky rice and arrange the steamed sweet potato, julienned carrots, and cucumber slices on the side.
- Garnish with fresh coriander and sprinkle chili flakes over the top, if desired. Serve warm.
