- Sticky rice - 150 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Eggs - 2 large
- Pandan leaves - 2 (optional, for flavor)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20-25 minutes until cooked through.
- In a bowl, mix the coconut milk, sugar, and salt until the sugar is dissolved. Reserve 1/4 of this mixture for serving.
- In another bowl, beat the eggs and then slowly incorporate the remaining coconut mixture, stirring until well combined.
- Once the rice is cooked, transfer it to a greased baking dish, spreading it evenly. Pour the egg and coconut mixture over the rice.
- Steam the rice and custard mixture for an additional 15-20 minutes until the custard is set.
- Remove from the steamer and let it cool slightly before cutting into squares.
- Serve warm, drizzled with the reserved coconut mixture and garnish with sesame seeds.
