Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Eggs - 2 large
  • Pandan leaves - 2 (optional, for flavor)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20-25 minutes until cooked through.
  3. In a bowl, mix the coconut milk, sugar, and salt until the sugar is dissolved. Reserve 1/4 of this mixture for serving.
  4. In another bowl, beat the eggs and then slowly incorporate the remaining coconut mixture, stirring until well combined.
  5. Once the rice is cooked, transfer it to a greased baking dish, spreading it evenly. Pour the egg and coconut mixture over the rice.
  6. Steam the rice and custard mixture for an additional 15-20 minutes until the custard is set.
  7. Remove from the steamer and let it cool slightly before cutting into squares.
  8. Serve warm, drizzled with the reserved coconut mixture and garnish with sesame seeds.
