Ingredients

  • Sticky rice - 200 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Ripe mango - 1 medium (about 200 grams)
  • Sesame seeds - 1 tablespoon
  • Fresh mint leaves - for garnish

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked sticky rice and steam it in a bamboo steamer or a heatproof dish over boiling water for about 20-25 minutes until tender.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves and the mixture is warm but not boiling.
  4. Once the sticky rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it, mixing gently to combine. Let it sit for 5 minutes to absorb the flavors.
  5. Peel and slice the ripe mango into thin strips.
  6. To serve, place a portion of the sticky rice on a plate, drizzle with the remaining coconut sauce, and arrange the mango slices on top.
  7. Sprinkle sesame seeds over the dish and garnish with fresh mint leaves.
