Ingredients
- Sticky rice - 200 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Ripe mango - 1 medium (about 200 grams)
- Sesame seeds - 1 tablespoon
- Fresh mint leaves - for garnish
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the soaked sticky rice and steam it in a bamboo steamer or a heatproof dish over boiling water for about 20-25 minutes until tender.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves and the mixture is warm but not boiling.
- Once the sticky rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it, mixing gently to combine. Let it sit for 5 minutes to absorb the flavors.
- Peel and slice the ripe mango into thin strips.
- To serve, place a portion of the sticky rice on a plate, drizzle with the remaining coconut sauce, and arrange the mango slices on top.
- Sprinkle sesame seeds over the dish and garnish with fresh mint leaves.
