- Chicken thighs - 300 grams, boneless and skinless
- Coconut milk - 100 ml
- Garlic - 3 cloves, minced
- Fish sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Lime juice - 1 tablespoon
- Cilantro - for garnish
- Chili sauce - for serving (optional)
Steps
- Soak the sticky rice in water for at least 30 minutes, then drain.
- In a bowl, mix the coconut milk, minced garlic, fish sauce, brown sugar, black pepper, and lime juice to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated, and let them marinate for at least 15 minutes.
- While the chicken is marinating, steam the soaked sticky rice in a bamboo steamer or a pot with a steaming basket for about 20-25 minutes, until tender and sticky.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 5-7 minutes on each side or until cooked through and slightly charred.
- Once cooked, let the chicken rest for a few minutes before slicing it into strips.
- Serve the grilled chicken over a bed of sticky rice, garnish with fresh cilantro, and add chili sauce if desired.
