Ingredients

  • Sticky Rice - 200 grams
  • Chicken Breast - 200 grams, diced
  • Bell Pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Onion - 1 small, sliced
  • Garlic - 3 cloves, minced
  • Egg - 1 large
  • Soy Sauce - 2 tablespoons
  • Oyster Sauce - 1 tablespoon
  • Vegetable Oil - 2 tablespoons
  • Black Pepper - 1/2 teaspoon
  • Fresh Coriander - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight for best results.
  2. Drain the soaked rice and steam it for about 20-25 minutes until translucent and sticky.
  3. In a large skillet or wok, heat vegetable oil over medium heat.
  4. Add minced garlic and sauté until fragrant, about 30 seconds.
  5. Add diced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  6. Stir in sliced bell pepper, julienned carrot, and onion, cooking for another 3-4 minutes until the vegetables are tender.
  7. Push the chicken and vegetables to one side of the skillet, crack the egg into the empty side, and scramble it until cooked.
  8. Combine everything in the skillet and add soy sauce, oyster sauce, and black pepper, stirring well to coat.
  9. Once combined, add the steamed sticky rice, gently folding it into the mixture until evenly distributed.
  10. Serve hot, garnished with chopped fresh coriander and lime wedges on the side.
