- Sticky Rice - 200 grams
- Chicken Breast - 200 grams, diced
- Bell Pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Onion - 1 small, sliced
- Garlic - 3 cloves, minced
- Egg - 1 large
- Soy Sauce - 2 tablespoons
- Oyster Sauce - 1 tablespoon
- Vegetable Oil - 2 tablespoons
- Black Pepper - 1/2 teaspoon
- Fresh Coriander - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Soak the sticky rice in water for at least 4 hours or overnight for best results.
- Drain the soaked rice and steam it for about 20-25 minutes until translucent and sticky.
- In a large skillet or wok, heat vegetable oil over medium heat.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Add diced chicken breast and cook until browned and cooked through, about 5-7 minutes.
- Stir in sliced bell pepper, julienned carrot, and onion, cooking for another 3-4 minutes until the vegetables are tender.
- Push the chicken and vegetables to one side of the skillet, crack the egg into the empty side, and scramble it until cooked.
- Combine everything in the skillet and add soy sauce, oyster sauce, and black pepper, stirring well to coat.
- Once combined, add the steamed sticky rice, gently folding it into the mixture until evenly distributed.
- Serve hot, garnished with chopped fresh coriander and lime wedges on the side.
