Ingredients
- Sticky rice - 200 grams
- Chicken breast - 250 grams
- Coconut milk - 100 ml
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime leaves - 2, finely shredded
- Cucumber - 1, sliced (for garnish)
- Coriander leaves - a handful (for garnish)
Steps
- Soak the sticky rice in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo steamer or a heatproof dish lined with cheesecloth for about 30 minutes until tender.
- While the rice is steaming, prepare the chicken by seasoning it with minced garlic, salt, sugar, and black pepper. Let it marinate for 15 minutes.
- Steam the marinated chicken breast for about 20-25 minutes until fully cooked and tender.
- In a small saucepan, gently heat the coconut milk with shredded lime leaves for about 5 minutes. Do not boil.
- Once the rice and chicken are done, fluff the rice with a fork and serve it on a plate.
- Slice the steamed chicken and place it over the sticky rice.
- Drizzle the warm coconut milk over the chicken and rice, and garnish with cucumber slices and fresh coriander leaves.
