Ingredients

  • Sticky rice - 200 grams
  • Chicken breast - 250 grams
  • Coconut milk - 100 ml
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime leaves - 2, finely shredded
  • Cucumber - 1, sliced (for garnish)
  • Coriander leaves - a handful (for garnish)

Steps

  1. Soak the sticky rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo steamer or a heatproof dish lined with cheesecloth for about 30 minutes until tender.
  3. While the rice is steaming, prepare the chicken by seasoning it with minced garlic, salt, sugar, and black pepper. Let it marinate for 15 minutes.
  4. Steam the marinated chicken breast for about 20-25 minutes until fully cooked and tender.
  5. In a small saucepan, gently heat the coconut milk with shredded lime leaves for about 5 minutes. Do not boil.
  6. Once the rice and chicken are done, fluff the rice with a fork and serve it on a plate.
  7. Slice the steamed chicken and place it over the sticky rice.
  8. Drizzle the warm coconut milk over the chicken and rice, and garnish with cucumber slices and fresh coriander leaves.
