- Erythritol or other low-carb sweetener - 1 teaspoon
- Salt - to taste
- Crushed peanuts - 20 grams (optional for garnish)
Steps
- Remove the leaves and stem from the cauliflower, then cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains.
- In a large skillet, add the riced cauliflower over medium heat and cook for about 5-7 minutes, stirring occasionally, until tender.
- In a separate saucepan, combine the coconut milk, fish sauce, erythritol, lime juice, and a pinch of salt. Simmer over low heat for 5 minutes, stirring occasionally.
- Once the cauliflower rice is cooked, remove it from heat and fluff it with a fork.
- To serve, place a generous portion of cauliflower rice on each plate, drizzle with the coconut sauce, and top with fresh basil, cilantro, and crushed peanuts if desired.
