Ingredients

  • Sticky rice - 200 grams
  • Crab meat (fresh or canned) - 150 grams
  • Coconut milk - 200 ml
  • Sugar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime juice - 1 tablespoon
  • Chili paste (Nam Prik Pao) - 1 tablespoon
  • Coriander leaves (for garnish) - a handful
  • Cucumber (for serving) - 1 small, sliced
  • Spring onion (for garnish) - 1, chopped

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30 minutes, or until tender and translucent.
  3. In a saucepan, combine the coconut milk, sugar, and salt, and heat gently until the sugar dissolves. Do not boil.
  4. Once the rice is cooked, transfer it to a mixing bowl and pour about half of the coconut milk mixture over the rice, mixing gently to combine. Let it sit for 10 minutes to absorb the flavors.
  5. Prepare the spicy dipping sauce by mixing the remaining coconut milk mixture with lime juice and chili paste in a small bowl.
  6. To serve, mold the sticky rice onto plates, top with generous amounts of crab meat, and drizzle with the spicy dipping sauce. Garnish with coriander leaves and chopped spring onions.
  7. Serve with cucumber slices on the side.
