- Sticky rice - 200 grams
- Crab meat (fresh or canned) - 150 grams
- Coconut milk - 200 ml
- Sugar - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime juice - 1 tablespoon
- Chili paste (Nam Prik Pao) - 1 tablespoon
- Coriander leaves (for garnish) - a handful
- Cucumber (for serving) - 1 small, sliced
- Spring onion (for garnish) - 1, chopped
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30 minutes, or until tender and translucent.
- In a saucepan, combine the coconut milk, sugar, and salt, and heat gently until the sugar dissolves. Do not boil.
- Once the rice is cooked, transfer it to a mixing bowl and pour about half of the coconut milk mixture over the rice, mixing gently to combine. Let it sit for 10 minutes to absorb the flavors.
- Prepare the spicy dipping sauce by mixing the remaining coconut milk mixture with lime juice and chili paste in a small bowl.
- To serve, mold the sticky rice onto plates, top with generous amounts of crab meat, and drizzle with the spicy dipping sauce. Garnish with coriander leaves and chopped spring onions.
- Serve with cucumber slices on the side.
