- Sticky rice - 150 grams
- Chicken thighs (boneless) - 300 grams
- Soy sauce (Halal) - 2 tablespoons
- Oyster sauce (Halal) - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Sesame oil - 1 tablespoon
- Sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Cucumber (sliced) - 1/2 medium
- Fresh coriander leaves - 2 tablespoons (for garnish)
- Water - 200 ml
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- In a bowl, combine the soy sauce, oyster sauce, minced garlic, grated ginger, sesame oil, sugar, and lime juice to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- While the chicken is marinating, drain the sticky rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel.
- Steam the rice over boiling water for about 20-25 minutes, or until the rice is tender and sticky.
- Heat a non-stick skillet over medium heat, add the marinated chicken, and cook for about 7-10 minutes on each side, or until cooked through and golden brown.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into pieces.
- Serve the sticky rice on a plate, topped with the sliced chicken, garnished with fresh coriander and cucumber slices on the side.
