Ingredients

  • Sticky rice - 150 grams
  • Chicken thighs (boneless) - 300 grams
  • Soy sauce (Halal) - 2 tablespoons
  • Oyster sauce (Halal) - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Cucumber (sliced) - 1/2 medium
  • Fresh coriander leaves - 2 tablespoons (for garnish)
  • Water - 200 ml

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a bowl, combine the soy sauce, oyster sauce, minced garlic, grated ginger, sesame oil, sugar, and lime juice to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. While the chicken is marinating, drain the sticky rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel.
  5. Steam the rice over boiling water for about 20-25 minutes, or until the rice is tender and sticky.
  6. Heat a non-stick skillet over medium heat, add the marinated chicken, and cook for about 7-10 minutes on each side, or until cooked through and golden brown.
  7. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into pieces.
  8. Serve the sticky rice on a plate, topped with the sliced chicken, garnished with fresh coriander and cucumber slices on the side.
