Ingredients

  • Glutinous rice - 1 cup
  • Coconut milk - 200 ml
  • Sugar - 3 tablespoons
  • Salt - 1/4 teaspoon
  • Sesame seeds - 2 tablespoons
  • Fresh mango - 1 medium, sliced
  • Water - 1.5 cups

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes.
  2. In a pot, bring 1.5 cups of water to a boil. Drain the soaked rice and add it to the boiling water. Cover and reduce the heat to low, cooking for 20-25 minutes until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the coconut sauce by combining coconut milk, sugar, and salt in a small saucepan. Heat over low until the sugar dissolves, stirring occasionally. Do not let it boil.
  4. Once the rice is cooked, transfer it to a large bowl and pour half of the coconut sauce over the rice. Stir gently to combine and let it sit for 10 minutes to absorb the flavors.
  5. To serve, place a portion of the sticky rice on a plate, drizzle with the remaining coconut sauce, and top with sliced mango. Sprinkle sesame seeds on top for garnish.
