Ingredients

  • Jasmine rice - 150 grams
  • Chicken breast - 250 grams
  • Chicken broth - 500 ml
  • Garlic - 2 cloves, minced
  • Cucumber - 1 small, sliced
  • Coriander leaves - a handful, for garnish
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Chili sauce - 1 tablespoon
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
  2. In a pot, bring the chicken broth to a gentle boil. Add the minced garlic and season with salt.
  3. Add the chicken breast to the boiling broth and poach for about 15-20 minutes, or until fully cooked. Remove the chicken and let it rest before slicing.
  4. In the same pot with the remaining broth, add the rinsed rice. Cover and cook on low heat for about 15 minutes or until the rice is tender and has absorbed the liquid.
  5. While the rice is cooking, prepare the dipping sauce by mixing soy sauce, sesame oil, and chili sauce in a small bowl.
  6. Once the rice is cooked, fluff it with a fork and serve it on plates. Top with sliced poached chicken, cucumber slices, and fresh coriander leaves.
  7. Drizzle the dipping sauce over the chicken and serve warm.
