- Basmati rice - 150 grams
- Water - 300 milliliters
- Fish fillet (e.g., tilapia or salmon) - 200 grams
- Turmeric powder - 1 teaspoon
- Coconut milk - 100 milliliters
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime - 1, sliced for garnish
- Fresh cilantro - a handful, for garnish
- Vegetable oil - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, combine the fish fillet with garlic, ginger, coriander, cumin, salt, and black pepper. Massage the spices into the fish and let it marinate for 15 minutes.
- In a pot, heat the vegetable oil over medium heat. Add the soaked rice and stir-fry for 2 minutes until slightly translucent.
- Pour in the coconut milk and water, then add turmeric powder. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and liquid is absorbed.
- While the rice is cooking, steam the marinated fish for about 10-12 minutes or until cooked through.
- Fluff the rice with a fork and serve it on plates topped with the steamed fish. Garnish with lime slices and fresh cilantro.
