Ingredients

  • Basmati rice - 150 grams
  • Coconut milk - 200 ml
  • Chicken thighs, boneless and skinless - 250 grams
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Green onions, chopped - 2 stalks
  • Cilantro, chopped - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pan, heat a tablespoon of oil over medium heat. Add the minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the chicken thighs to the pan, season with turmeric, cumin, coriander, salt, and pepper. Cook for about 5-7 minutes until the chicken is browned on all sides.
  4. Pour in the coconut milk, and bring the mixture to a simmer. Cover the pan and cook for 15 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the pan and set aside. Add the soaked and drained rice into the pan with the coconut milk mixture.
  6. Stir well, then place the chicken back on top of the rice. Cover and cook on low heat for 15-20 minutes or until the rice is tender and has absorbed the liquid.
  7. Once cooked, fluff the rice with a fork, and garnish with chopped green onions and cilantro before serving with lime wedges.
