Ingredients
- Basmati rice - 150 grams
- Coconut milk - 200 ml
- Chicken thighs, boneless and skinless - 250 grams
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Green onions, chopped - 2 stalks
- Cilantro, chopped - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pan, heat a tablespoon of oil over medium heat. Add the minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
- Add the chicken thighs to the pan, season with turmeric, cumin, coriander, salt, and pepper. Cook for about 5-7 minutes until the chicken is browned on all sides.
- Pour in the coconut milk, and bring the mixture to a simmer. Cover the pan and cook for 15 minutes, or until the chicken is cooked through.
- Remove the chicken from the pan and set aside. Add the soaked and drained rice into the pan with the coconut milk mixture.
- Stir well, then place the chicken back on top of the rice. Cover and cook on low heat for 15-20 minutes or until the rice is tender and has absorbed the liquid.
- Once cooked, fluff the rice with a fork, and garnish with chopped green onions and cilantro before serving with lime wedges.
