Ingredients
- Basmati rice - 150 grams
- Firm tofu - 200 grams
- Coconut milk - 200 ml
- Vegetable broth - 200 ml
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Oil (coconut or vegetable) - 2 tablespoons
- Salt - to taste
- Fresh cilantro - for garnish
- Cucumber - for serving
Steps
- Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, combine soy sauce, lime juice, garlic, ginger, turmeric, cumin, coriander, and salt. Add the tofu cubes and marinate for at least 15 minutes.
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a large pot, heat the oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the marinated tofu (discarding excess marinade) to the pot and cook until lightly browned, about 5-7 minutes.
- Stir in the rinsed rice and cook for 2 minutes, allowing the rice to absorb the flavors.
- Pour in the coconut milk and vegetable broth, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and liquid is absorbed.
- Once cooked, fluff the rice with a fork and let it sit covered for an additional 5 minutes.
- Serve the Khao Mok Gai hot, garnished with fresh cilantro and cucumber slices on the side.
