Ingredients

  • Basmati rice - 150 grams
  • Firm tofu - 200 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 200 ml
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Oil (coconut or vegetable) - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Cucumber - for serving

Steps

  1. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, combine soy sauce, lime juice, garlic, ginger, turmeric, cumin, coriander, and salt. Add the tofu cubes and marinate for at least 15 minutes.
  3. Rinse the basmati rice under cold water until the water runs clear, then drain.
  4. In a large pot, heat the oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  5. Add the marinated tofu (discarding excess marinade) to the pot and cook until lightly browned, about 5-7 minutes.
  6. Stir in the rinsed rice and cook for 2 minutes, allowing the rice to absorb the flavors.
  7. Pour in the coconut milk and vegetable broth, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and liquid is absorbed.
  8. Once cooked, fluff the rice with a fork and let it sit covered for an additional 5 minutes.
  9. Serve the Khao Mok Gai hot, garnished with fresh cilantro and cucumber slices on the side.
