- Jasmine rice - 150 grams
- Vegetable broth - 400 ml
- Firm tofu - 200 grams
- Cucumber - 1 small, sliced
- Fresh cilantro - 10 grams, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Chili sauce - 1 teaspoon (optional)
- Lime - 1, juiced
- Salt - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.
- While the rice is cooking, press the firm tofu to remove excess moisture, then cut into cubes.
- In a steamer basket, place the tofu cubes and steam for about 10-15 minutes until heated through.
- In a small bowl, mix together the soy sauce, sesame oil, minced garlic, grated ginger, lime juice, and chili sauce if using to create the dipping sauce.
- Once the rice is cooked, fluff it with a fork and season with salt to taste.
- To serve, plate the fragrant rice, top with steamed tofu, and garnish with cucumber slices and chopped cilantro. Serve the dipping sauce on the side.
