Ingredients

  • Jasmine rice - 150 grams
  • Vegetable broth - 400 ml
  • Firm tofu - 200 grams
  • Cucumber - 1 small, sliced
  • Fresh cilantro - 10 grams, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Chili sauce - 1 teaspoon (optional)
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.
  3. While the rice is cooking, press the firm tofu to remove excess moisture, then cut into cubes.
  4. In a steamer basket, place the tofu cubes and steam for about 10-15 minutes until heated through.
  5. In a small bowl, mix together the soy sauce, sesame oil, minced garlic, grated ginger, lime juice, and chili sauce if using to create the dipping sauce.
  6. Once the rice is cooked, fluff it with a fork and season with salt to taste.
  7. To serve, plate the fragrant rice, top with steamed tofu, and garnish with cucumber slices and chopped cilantro. Serve the dipping sauce on the side.
