Ingredients

  • Chicken breast - 300 grams
  • Jasmine rice - 1 cup (200 grams)
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, sliced
  • Cucumber - 1 small, sliced
  • Soy sauce - 2 tablespoons
  • Chicken broth - 2 cups (500 ml)
  • Sesame oil - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh coriander - for garnish

Steps

  1. In a saucepan, combine 2 cups of chicken broth, minced garlic, and sliced ginger. Bring to a boil.
  2. Add the chicken breast to the boiling broth, reduce the heat to low, and simmer for 25 minutes until cooked through.
  3. Remove the chicken from the broth and let it cool slightly. Reserve the broth for later.
  4. While the chicken is cooling, rinse the jasmine rice under cold water until the water runs clear. Drain well.
  5. In another saucepan, add the rinsed rice and 2 cups of the reserved broth. Bring to a boil, then cover and reduce the heat to low. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Once the chicken is cooled, slice it thinly.
  7. To serve, place a portion of rice on each plate, top with sliced chicken, and drizzle with sesame oil. Serve with sliced cucumber on the side and soy sauce for dipping.
  8. Garnish with fresh coriander before serving.
