Ingredients
- Chicken breast - 300 grams
- Jasmine rice - 1 cup (200 grams)
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, sliced
- Cucumber - 1 small, sliced
- Soy sauce - 2 tablespoons
- Chicken broth - 2 cups (500 ml)
- Sesame oil - 1 teaspoon
- Salt - 1 teaspoon
- Fresh coriander - for garnish
Steps
- In a saucepan, combine 2 cups of chicken broth, minced garlic, and sliced ginger. Bring to a boil.
- Add the chicken breast to the boiling broth, reduce the heat to low, and simmer for 25 minutes until cooked through.
- Remove the chicken from the broth and let it cool slightly. Reserve the broth for later.
- While the chicken is cooling, rinse the jasmine rice under cold water until the water runs clear. Drain well.
- In another saucepan, add the rinsed rice and 2 cups of the reserved broth. Bring to a boil, then cover and reduce the heat to low. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
- Once the chicken is cooled, slice it thinly.
- To serve, place a portion of rice on each plate, top with sliced chicken, and drizzle with sesame oil. Serve with sliced cucumber on the side and soy sauce for dipping.
- Garnish with fresh coriander before serving.
