Ingredients

  • Jasmine rice - 150 grams
  • Shrimp paste (kapi) - 1 tablespoon
  • Water - 300 milliliters
  • Coconut oil - 1 tablespoon
  • Egg - 1 large
  • Green beans - 50 grams, chopped
  • Carrot - 1 medium, diced
  • Thai basil leaves - 20 grams
  • Cucumber - 1 small, sliced
  • Cherry tomatoes - 100 grams, halved
  • Lime - 1, cut into wedges
  • Fish sauce - 1 tablespoon
  • Chili flakes - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a pot, bring 300 ml of water to a boil, add the soaked rice, and cook on low heat for about 15 minutes or until the water is absorbed and the rice is tender.
  3. While the rice is cooking, heat coconut oil in a frying pan over medium heat and add the shrimp paste, stirring until fragrant.
  4. Add the chopped green beans and diced carrot to the pan. Sauté for about 5 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the pan, crack the egg into the other side, and scramble it until fully cooked.
  6. Once the rice is done, gently fluff it and add it to the pan with the shrimp paste and vegetables, mixing everything together well.
  7. Season the rice mixture with fish sauce and chili flakes to taste, then stir in the Thai basil leaves.
  8. Serve the Khao Kluk Kapi on plates, garnished with cucumber slices, cherry tomatoes, and lime wedges on the side.
