Ingredients

  • Jasmine rice - 150 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 200 ml
  • Carrot - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Green peas - 100 grams, fresh or frozen
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Cilantro - 10 grams, chopped
  • Lime juice - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped shallots and minced garlic, sauté until translucent (about 2-3 minutes).
  3. Add the diced carrot and bell pepper to the saucepan, cooking for another 3-4 minutes until they begin to soften.
  4. Stir in the jasmine rice, and cook for an additional 2 minutes, allowing it to toast slightly.
  5. Pour in the coconut milk and vegetable broth, and season with salt and black pepper. Bring to a gentle boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes until the rice is cooked and has absorbed the liquid.
  7. In the final 5 minutes of cooking, add the green peas to the rice.
  8. Once cooked, remove from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork.
  9. Stir in the fresh basil, cilantro, and lime juice before serving. Adjust seasoning if needed.
  10. Serve warm, garnished with additional fresh herbs if desired.
