Ingredients
- Jasmine rice - 150 grams
- Coconut milk - 200 ml
- Vegetable broth - 200 ml
- Carrot - 1 medium, diced
- Bell pepper (red or yellow) - 1 medium, diced
- Green peas - 100 grams, fresh or frozen
- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Cilantro - 10 grams, chopped
- Lime juice - 1 tablespoon
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat olive oil over medium heat. Add the chopped shallots and minced garlic, sauté until translucent (about 2-3 minutes).
- Add the diced carrot and bell pepper to the saucepan, cooking for another 3-4 minutes until they begin to soften.
- Stir in the jasmine rice, and cook for an additional 2 minutes, allowing it to toast slightly.
- Pour in the coconut milk and vegetable broth, and season with salt and black pepper. Bring to a gentle boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes until the rice is cooked and has absorbed the liquid.
- In the final 5 minutes of cooking, add the green peas to the rice.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork.
- Stir in the fresh basil, cilantro, and lime juice before serving. Adjust seasoning if needed.
- Serve warm, garnished with additional fresh herbs if desired.
