- Oyster sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Star anise - 2 whole
- Cinnamon stick - 1
- Water - 500 ml
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Green onions - 1, sliced (for garnish)
- Lime - 1, cut into wedges (for serving)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat a bit of oil over medium heat, then add the minced garlic and shallots, sauté until they are fragrant and translucent.
- Add the pork shoulder to the pot and brown on all sides for about 5-7 minutes.
- Stir in the minced ginger, soy sauce, oyster sauce, brown sugar, star anise, and cinnamon stick.
- Pour in the water, bring to a boil, then reduce the heat to low and cover, simmering for about 60 minutes or until the pork is tender.
- While the pork is cooking, drain the soaked rice and cook it according to package instructions until fluffy.
- Once the pork is tender, remove it from the pot, and strain the broth to remove the whole spices. Return the liquid to the pot.
- Let the pork cool slightly before shredding it into bite-sized pieces.
- Add the shredded pork back into the pot with the strained broth, simmer for an additional 10 minutes to absorb the flavors.
- To serve, place a portion of rice on a plate, top with the braised pork and broth, and garnish with fresh cilantro and green onions. Serve with lime wedges on the side.
