Ingredients

  • Jasmine rice - 150 grams
  • Pork shoulder - 300 grams, cut into chunks

  • Shallots - 2, thinly sliced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Star anise - 2 whole
  • Cinnamon stick - 1
  • Water - 500 ml
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Green onions - 1, sliced (for garnish)
  • Lime - 1, cut into wedges (for serving)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat a bit of oil over medium heat, then add the minced garlic and shallots, sauté until they are fragrant and translucent.
  3. Add the pork shoulder to the pot and brown on all sides for about 5-7 minutes.
  4. Stir in the minced ginger, soy sauce, oyster sauce, brown sugar, star anise, and cinnamon stick.
  5. Pour in the water, bring to a boil, then reduce the heat to low and cover, simmering for about 60 minutes or until the pork is tender.
  6. While the pork is cooking, drain the soaked rice and cook it according to package instructions until fluffy.
  7. Once the pork is tender, remove it from the pot, and strain the broth to remove the whole spices. Return the liquid to the pot.
  8. Let the pork cool slightly before shredding it into bite-sized pieces.
  9. Add the shredded pork back into the pot with the strained broth, simmer for an additional 10 minutes to absorb the flavors.
  10. To serve, place a portion of rice on a plate, top with the braised pork and broth, and garnish with fresh cilantro and green onions. Serve with lime wedges on the side.
