Ingredients

  • Jasmine rice - 150 grams
  • Pork leg (bone-in) - 400 grams
  • Water - 500 ml
  • Soy sauce - 3 tablespoons
  • Dark soy sauce - 1 tablespoon
  • Palm sugar - 1 tablespoon
  • Five-spice powder - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Star anise - 1 pod
  • Coriander roots - 2, chopped
  • Green onions - 2, sliced for garnish
  • Cucumber - 1/2, sliced for garnish
  • Fresh cilantro - a handful, for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak in water for 30 minutes.
  2. In a large pot, combine the pork leg, 500 ml water, soy sauce, dark soy sauce, palm sugar, five-spice powder, minced garlic, minced ginger, star anise, and chopped coriander roots.
  3. Bring the mixture to a boil over medium heat, then reduce to low heat and cover, allowing to simmer for about 60 minutes until the pork is tender.
  4. While the pork is cooking, drain the soaked rice and add it to a rice cooker or pot with 300 ml of water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and cook for 15 minutes.
  5. Once the pork is tender, remove it from the pot, and let it rest for a few minutes before slicing.
  6. Strain the braising liquid to remove solids and return it to the pot. Simmer for a few more minutes to thicken the sauce if desired.
  7. To serve, place a portion of jasmine rice on each plate, top with sliced pork, and drizzle with the thickened sauce. Garnish with sliced cucumber, green onions, and fresh cilantro.
