- Jasmine rice - 150 grams
- Pork leg (bone-in) - 400 grams
- Water - 500 ml
- Soy sauce - 3 tablespoons
- Dark soy sauce - 1 tablespoon
- Palm sugar - 1 tablespoon
- Five-spice powder - 1 teaspoon
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Star anise - 1 pod
- Coriander roots - 2, chopped
- Green onions - 2, sliced for garnish
- Cucumber - 1/2, sliced for garnish
- Fresh cilantro - a handful, for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak in water for 30 minutes.
- In a large pot, combine the pork leg, 500 ml water, soy sauce, dark soy sauce, palm sugar, five-spice powder, minced garlic, minced ginger, star anise, and chopped coriander roots.
- Bring the mixture to a boil over medium heat, then reduce to low heat and cover, allowing to simmer for about 60 minutes until the pork is tender.
- While the pork is cooking, drain the soaked rice and add it to a rice cooker or pot with 300 ml of water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and cook for 15 minutes.
- Once the pork is tender, remove it from the pot, and let it rest for a few minutes before slicing.
- Strain the braising liquid to remove solids and return it to the pot. Simmer for a few more minutes to thicken the sauce if desired.
- To serve, place a portion of jasmine rice on each plate, top with sliced pork, and drizzle with the thickened sauce. Garnish with sliced cucumber, green onions, and fresh cilantro.
