- Jasmine rice - 150 grams
- Firm tofu - 200 grams
- Vegetable broth - 250 ml
- Soy sauce - 3 tablespoons
- Dark soy sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Coriander roots - 2, chopped
- Black pepper - 1/2 teaspoon
- Star anise - 1 piece
- Cucumber - 1/2, sliced (for garnish)
- Pickled mustard greens - 50 grams (for garnish)
- Fresh coriander leaves - a handful (for garnish)
- Vegetable oil - 2 tablespoons
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
- While the rice is cooking, press the firm tofu to remove excess moisture and cut it into cubes.
- In a pan, heat the vegetable oil over medium heat and add the minced garlic and sliced shallots. Sauté until fragrant and golden.
- Add the tofu cubes to the pan and fry until they are golden brown on all sides.
- Stir in the chopped coriander roots, soy sauce, dark soy sauce, brown sugar, black pepper, and star anise, then pour in the vegetable broth.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, allowing the tofu to absorb the flavors.
- Once the rice is cooked, fluff it with a fork and divide it between two serving plates.
- Top the rice with the braised tofu and sauce, then garnish with sliced cucumber, pickled mustard greens, and fresh coriander leaves.
