Khanom Tien

Khanom Tien is a delightful Thai snack made of coconut milk and rice flour, filled with a sweet mung bean paste. This traditional treat is steamed in banana leaves, giving it a beautiful presentation and unique flavor.

Ingredients

  • Rice flour - 100 grams
  • Coconut milk - 150 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Mung beans (split) - 50 grams
  • Water - 200 ml
  • Banana leaves - 4 pieces (for steaming)
  • Pandan leaves (optional, for fragrance) - 1 piece

Steps

  1. Soak the mung beans in water for at least 2 hours or overnight. Drain and steam them for about 20 minutes until soft.
  2. In a blender or food processor, blend the steamed mung beans with 25 grams of sugar until smooth. Set aside.
  3. In a mixing bowl, combine rice flour, coconut milk, remaining sugar, and salt. Mix until smooth and well combined.
  4. Prepare the banana leaves by steaming them for a few minutes to make them pliable. Cut them into squares of about 15x15 cm.
  5. On each banana leaf square, place a tablespoon of the rice flour mixture, followed by a tablespoon of the mung bean paste, and top with another tablespoon of the rice flour mixture.
  6. Fold the banana leaves to create a small packet, securing the filling inside.
  7. Place the packets in a steamer and steam for about 20 minutes until the mixture is set and cooked through.
  8. Remove from the steamer, let cool slightly, and serve warm or at room temperature.
