Ingredients
- Rice flour - 100 grams
- Coconut milk - 200 milliliters
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Pandan leaves - 2 pieces (for aroma, optional)
- Grated coconut (fresh or desiccated) - 50 grams
- Water - 100 milliliters
Steps
- In a mixing bowl, combine the rice flour, sugar, and salt. Gradually add the coconut milk and mix until a smooth batter forms.
- In a small saucepan, heat 100 milliliters of water and bring to a gentle simmer. If using pandan leaves, add them to the water for extra aroma.
- Prepare small bowls or cups suitable for steaming and lightly grease them with oil to prevent sticking.
- Pour a thin layer of the rice flour batter into each cup, filling them about 1/3 full. Steam for about 5 minutes until set.
- In the meantime, mix the grated coconut with a pinch of salt in a separate bowl.
- Once the first layer has set, remove the cups from the steamer, add a spoonful of the grated coconut mixture on top of the steamed layer, then cover with more rice flour batter until nearly full.
- Return the cups to the steamer and steam for an additional 15-20 minutes until fully cooked and the top layer is set.
- Remove from the steamer and allow to cool slightly before gently removing the Khanom Thung Tua from the cups.
