Ingredients
- Rice flour - 100 grams
- Coconut milk - 150 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Pandan leaves - 2 pieces (for flavoring)
- Grated coconut (fresh or desiccated) - 50 grams
- Water - 100 ml
Steps
- In a mixing bowl, combine the rice flour, sugar, and salt.
- Gradually add the coconut milk and water to the flour mixture, stirring until smooth and well combined.
- Prepare a steamer and bring water to a boil. Line small cups or molds with pandan leaves or lightly greased parchment paper.
- Pour a tablespoon of the rice flour mixture into each cup, then add a teaspoon of grated coconut on top.
- Cover with more rice flour mixture, filling the cups to about 3/4 full.
- Place the cups in the steamer and steam for about 20-25 minutes until the mixture is set and firm.
- Remove from the steamer and let them cool slightly before serving.
