  • Salt - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Grated coconut (for topping) - 30 grams

Steps

  1. In a mixing bowl, combine rice flour, sugar, baking powder, and salt.
  2. Add coconut milk and pandan juice to the dry ingredients, mixing until smooth and well combined.
  3. Lightly grease small ramekins or a steaming tray with oil.
  4. Pour the batter into the prepared ramekins, filling them to about 3/4 full.
  5. Steam the batter over boiling water for about 20 minutes, or until a toothpick inserted comes out clean.
  6. Remove from the steamer and let cool slightly before topping with grated coconut.
  7. Serve warm or at room temperature and enjoy your Khanom Pung Ngan.
