Ingredients

  • Rice flour - 50g
  • Tapioca flour - 25g
  • Coconut milk - 200ml
  • Water - 100ml
  • Sugar - 50g
  • Salt - 1/4 tsp
  • Pandan leaves - 2 (for flavoring)

Steps

  1. In a mixing bowl, combine the rice flour, tapioca flour, and sugar. Mix well to combine the dry ingredients.
  2. In a saucepan, heat the coconut milk, water, and salt over medium heat until warm but not boiling. Stir to dissolve the salt and sugar.
  3. Add the warm coconut milk mixture to the dry ingredients and stir until smooth. Strain the mixture through a fine sieve to remove lumps.
  4. Prepare a steamer and line small cups or ramekins with pandan leaves for flavor. Fill each cup with about 1/3 of the mixture.
  5. Steam the cups over high heat for about 15 minutes until the first layer is set.
  6. Once the first layer is set, pour in another layer of the remaining mixture, filling the cups to the top. Steam for an additional 15-20 minutes, or until the custard is fully cooked and firm.
  7. Remove the cups from the steamer and let them cool slightly before serving.
