Ingredients
- Rice flour - 50g
- Tapioca flour - 25g
- Coconut milk - 200ml
- Water - 100ml
- Sugar - 50g
- Salt - 1/4 tsp
- Pandan leaves - 2 (for flavoring)
Steps
- In a mixing bowl, combine the rice flour, tapioca flour, and sugar. Mix well to combine the dry ingredients.
- In a saucepan, heat the coconut milk, water, and salt over medium heat until warm but not boiling. Stir to dissolve the salt and sugar.
- Add the warm coconut milk mixture to the dry ingredients and stir until smooth. Strain the mixture through a fine sieve to remove lumps.
- Prepare a steamer and line small cups or ramekins with pandan leaves for flavor. Fill each cup with about 1/3 of the mixture.
- Steam the cups over high heat for about 15 minutes until the first layer is set.
- Once the first layer is set, pour in another layer of the remaining mixture, filling the cups to the top. Steam for an additional 15-20 minutes, or until the custard is fully cooked and firm.
- Remove the cups from the steamer and let them cool slightly before serving.
